Hilcona introduces CO2 Score in the public foodservice recipe database World premiere: When enjoyment, culinary delights, innovation and measures against climate change harmonize. Hilcona is the first food producer to introduce the new CO2 Score in the public recipe database in the foodservice sector with immediate effect. Scientifically supported by the Eaternity Institute, which is a world leader in the field of calculations for food and its impact on the environment. A completely new culinary experience is guaranteed. Healthy eating is good for the climate How sustainable are the different foods? What impact do they have on the climate? The new Hilcona CO2 Score shows how it’s done. At a glance, (not only) the kitchen professionals immediately recognize the sustainability of the respective menus. The more than 600 Hilcona professional kitchen recipes (in D, E & F) can be filtered according to the new CO2 score via a cloud-based database.
Access is via the Hilcona Foodservice homepage and is accessible to all. An additional advantage: The tried and tested recipes also support the chefs in purchasing the right quantities of food. This avoids food waste before it even occurs in the kitchen. For the catering industry, this means a radical change in which « sustainability » finally gets the substance that the term deserves. « We linked Eaternity’s already proven climate database with Hilcona Foodservice’s extensive recipe database, » says Axel Dröge, Project Manager and Hilcona Foodservice Manager Concept Development. « Through this joint exchange of the two systems, there is now a unique opportunity for chefs to actively engage with the environment in the simplest possible way and without sacrificing pleasure. Thanks to the cloud-based recipe database, chefs can filter recipes according to the CO2 score. Of course, it is also possible to combine the search by culinary keywords, categories, etc. It is even possible to filter according to the Nutri-Score. Save more than half of CO2 from food production If the majority of chefs offer tasty dishes with a climate score of 3 stars, more than half of the CO2 from food production is saved. According to the Eaternity Institute, about 1/3 of the world’s CO2 emissions today come from food. « This is about twice as much CO2 generated worldwide by all private transport today, » explained Manuel Klarmann, CEO and co-founder of Eaternity.
